INGREDIENTS
3 tbs olive oil
1 small onion, chopped
3 cloves garlic, minced
1 cup chopped broccoli 3 carrots, diced
2 - 3 medium zucchini and yellow squash, chopped
1 medium can chopped tomatoes 6 cups vegetable broth 1 can kidney beans, rinsed 1 can cannelloni or beans, rinsed 1 bay leaf 1 tsp salt
1 cup vegan pesto (see pesto post for recipe) 2 cups frozen spinach or kale
In large pot, heat olive oil and sauté onion and garlic.
When golden, add the broccoli, carrots, zucchini and squash, sauté 10 min or until they began to soften.
Then add in can tomatoes, beans, vegetable broth, bay leaf and salt. Bring all to boil and reduced to simmer for about 30 - 45 minutes, adding broth if needed.
Bring back to boil, stir in pesto and spinach. Cook until spinach has heated and everything is combined. Season as needed.
