Minestrone

INGREDIENTS

3 tbs olive oil

1 small onion, chopped

3 cloves garlic, minced

1 cup chopped broccoli 3 carrots, diced

2 - 3 medium zucchini and yellow squash, chopped

1 medium can chopped tomatoes 6 cups vegetable broth 1 can kidney beans, rinsed 1 can cannelloni or beans, rinsed 1 bay leaf 1 tsp salt

1 cup vegan pesto (see pesto post for recipe) 2 cups frozen spinach or kale


  • In large pot, heat olive oil and sauté onion and garlic.

  • When golden, add the broccoli, carrots, zucchini and squash, sauté 10 min or until they began to soften.

  • Then add in can tomatoes, beans, vegetable broth, bay leaf and salt. Bring all to boil and reduced to simmer for about 30 - 45 minutes, adding broth if needed.

  • Bring back to boil, stir in pesto and spinach. Cook until spinach has heated and everything is combined. Season as needed.
