Fiery Sesame Tofu

TOFU INGREDIENTS
1 block extra firm tofu, pressed
2 tbs corn starch
1 tbs sesame oil
SAUCE INGREDIENTS
1/3 cup reduced-sodium soy sauce or tamari
2 tbs maple syrup or honey
1-2 tsp chili garlic sauce, depending on your preferred heat level
3/4 tsp rice wine vinegar
2 tsp corn starch
2 1/2 tsp water
1 tsp sesame oil
1 1/2 tbs pineapple juice (optional)
Prep the tofu by placing it on some paper towels and placing something heavy on top, to release any extra moisture. Press for at least 15 minutes, but the longer the better
Once the tofu has drained, slice in half then into cubes and place into a large bowl. Sprinkle cornstarch on top and gently toss with your hands to ensure all tofu pieces are covered.
In a large skillet, add sesame oil then bring up to medium-high heat. Once oil is heated up, add the tofu to the skillet and let it brown on all sides.
While the tofu is browning, mix all the sauce ingredients together in a bowl and whisk until incorporated.
Once the tofu is done, add the sauce to the skillet, gently stirring in with the tofu. Let simmer briefly, it should thicken quite quickly thanks to the corn starch.
Garnish with sesame seeds and serve immediately over rice and/or veggies, enjoy!
