Chickpea Flour Tortillas

INGREDIENTS

Chickpea Flour*

Olive Oil

Water


  • Heat a nonstick skillet on medium high heat

  • In a bowl, mix equal parts chickpea flour and water and a splash of olive oil (if batter seems too thick, add more water, a tbs at a time

  • Ladle a small amount of batter into the heated pan and swirl around as you would a pancake. When the batter has cooked and released from the pan, flip over and cook other side until done.

  • Serve with your favorite taco ingredients or make into a quesadilla or flatbread!

* if you don’t have or can’t find chickpea flour, you can make it! All you need are dried chickpeas and a high powered blender (and earplugs!). Blend chickpeas until they become a fine powder, this could take a few minutes. Sift flour thru a fine mesh strainer into a bowl to remove larger chunks, which can be blended again if you want. Now you have chickpea flour!
